VEGAN PANCAKE WITH BLUEBERRY JAM AND ELDERBERRIES HONEY

These vegan pancakes are an idea for a Sunday brunch. A simple and easy to do pancake, that combines very well with honey.

The dough is made with buckwheat flour, almond milk, the filling has blueberries jam, and the topping, elderberries honey meia.dúzia®

Ingredients:

  • 1 tea cup of buckwheat flour

  • 1/2 tbsp. baking powder

  • 1/4 tbsp. of salt

  • 1 tbsp. of cocoa sugar or yellow sugar

  • 1 Tea cup of almond milk

  • 1 tbsp. of cocoa oil

  • Chia seeds

Filling and Topping.

  • 100g of fresh blueberries

  • 1 200 gr tube of Blueberry and lemon balm jam meia.dúzia®

  • 1 75 gr tube of elderberries honey meia.dúzia® 

Preparation:

  1. In a bowl mix the flour, baking powder, salt and coconut milk

  2. Mix the rest of the ingredients, gently stir!

  3. Let it rest for 5 minutes

  4. In a frying pan heat, the coconut oil

  5. Whit a spoon place the dough in the pan and let it cook for 2 minutes.

  6.  Turn it and let it cook for 1 minute

  7.  Repeat the process, until the dough is finished.

 Topping:

  1. Place a pancake 

  2. Spread the blueberry jam meia.dúzia®

  3. On top place another pancake

  4. Spread again the blueberry jam meia.dúzia®

  5. Decorate with some fresh blueberries and elderberries honey meia.dúzia®
