Vegan Cake with Green tea and meia.dúzia® Raspberry and Lime extra jam with Mint. Healthy, Sustainable and Delicious!

Baking without eggs or dairy sounds incredibly difficult right? Actually, it’s quite easy! The vegan movement has grown substantially in the past few years, while the population seeks to find more healthy and conscious food. Vegan food has become more popular and therefore, nowadays we can find vegetable alternatives such has plant-based milk or soya cream in almost every supermarket, making it quite easy to prepare any dish in a vegan version!

In collaboration with Francisca Mendes - Green Delights, we’ve created a recipe for a simple, cute and delicious cake that will please everyone at home, whether or not vegetarians!

Cake (ingredients for 1 cake):
- 1 cup green tea
- ½ cup sunflower oil
- 1 lime (juice and zest)
- 1 lemon (juice and zest)
- 1 tablespoon ground flaxseeds
- 2 cups spelt flour
- 1 cup light brown sugar
- 1 tablespoon baking powder

- meia.dúzia® Raspberry and Lime extra jam with Mint (to taste)
- 1 pack soya cream
- 1 lime (juice and zest)
- 2 + ½ tablespoons sugar
- ½ teaspoon vanilla extract

Preparation mode:

Start by prepping the green tea (2 cups in total) and let it cool down completely. Preheat oven to 180ºC. In a large bowl combine the flour with the light brown sugar, baking powder, lemon zest and lime zest. In a second bowl combine the green tea with the sunflower oil, lemon juice and lime juice. Add the grown flaxseeds to the second bowl and whisk well. Combine the liquid ingredients with the solid ones. Pour the cake batter on a round cake tin (~24 cm diameter) lined with parchment paper. Bake for 20-24 minutes. Repeat this process to make a second cake.

To prepare the filling, whisk the soya cream with a hand mixer until it forms soft peaks. Then add the sugar, the juice and zest of a lime and vanilla extract. Cover the first cake with a generous layer of raspberry and lime extra jam with mint. Add whipped soya cream on top. Cover the filling with the second cake. Finish the cake with powdered sugar and fresh raspberries (optional).
