Turkey with “Reineta” apple puree and Strawberry jam with Mint

A recipe that harmonizes Turkey, a usual in Portuguese cuisine, with different flavours which bind in a special way. The Strawberry Jam with Mint presents in this dish its sweet and slightly sour taste, with a fresh mint touch. Ideal for those looking for unusual flavours experiences!


600g of Turkey breast;
50 ml extra virgin olive oil;
100ml white wine;
300 ml soy sauce;
1 sprig of rosemary;
1 bunch of parsley;
1 thyme branch;
4 oranges
Pepper qb.
800 g of reineta apple;
Cinnamon sticks
Butter with salt
Peel of lemon qb.
100 ml of meia.dúzia® Strawberry jam with Mint;
100 g chopped raspberry;
100 g of sliced strawberries;
20 ml lemon juice
Red fruits

Preparation method:

TURKEY: A tray place the turkey orange juice and orange peel. Add the olive oil, the soy sauce and the remaining ingredients. Marinate for two hours. Bake at 200ºC for about 40 minutes. Undo the turkey breast.
PUREE: Remove the core from apples. Inside the apple introduce the cinnamon stick, a butter nut and a lemon peel. Bake at 200ºC for about 30 minutes. Remove the cinnamon stick and lemon peel and puree the apples, add more butter if necessary.
SAUCE: In a pan, bring the strawberries, raspberry, lemon juice, salt and meia.dúzia® Strawberry jam with Mint to a syrup consistency.
