"Bravo de Esmolfe" Apple PDO

Known since the 18th century, this variety originated from the village of Esmolfe - Penalva do Castelo was obtained from a seed tree, whose fruits were highly appreciated, causing an intense search for material and grafting and the dissemination of the variety. "Bravo de Esmolfe" Apple PDO has the following characteristics: medium and small size, oblong-conical shape, whitish, eventually with reddish spots and a white, soft, juicy, sweet pulp with good tasting qualities and intense and pleasant aroma.

The use of the Protected Designation of Origin "Bravo de Esmolfe Apple - PDO" is reserved for products that comply with the specifications and all the provisions contained in the Specification Book, where the product must comply with the respective installation rules and orchards, as well as substances forbidden and conditions to be observed in the production, harvesting, transport, calibration and packaging. Only producers who are expressly authorized by the Group - FELBA - Beira Alta center for the  fruits and vegetables appreciation, may benefit from the use of the Protected Designation of Origin "Bravo de Esmolfe Apple - PDO".

This is a special apple, produced in the north and central regions of Portugal, Protected Designation of Origin (PDO). It's extremely aromatic, juicy, sweet and simultaneously sour, combining perfectly with the mint, that provides a touch of freshness to the jam. The Port wine adds a sophisticated final touch, with its delicate flavour and slightly sweet scent.

This jam's extremely aromatic due to the juiciness and sweetness of the fruit taht combined with cinnamon, of pungent and hot taste, provides a delicate flavour with an intense cinnamon touch. This mixture's one of the most appreciated pairings of fruits and spices throughout the world.

SuggestionsThis fruit jam with its very peculiar characteristics, can be used to perfectly pair with Pretzels (traditional german breads), canapés, cheddar our goat cheese sandwiches, coucous salads, pork or chicken roasts, or lamb stew. It can also be used in fillings or toppings for muffins, donuts, ice-creams, macaroons, cheesecakes, crumbles, baked apples, crepes, pavlova or even oatmeal’s. It can be added to smoothies, whisky cocktails (with ginger, nutmeg, and lemon juice) and apple cider cocktails.

VEGETARIAN SALAD WITH meia.dúzia® "BRAVO DE ESMOLFE" APPLE EXTRA JAM WITH MINT AND PORT WINE

Salada Vegetariana com doce de maça

INGREDIENTS
Lettuce + Arugula
Salad seasoning Emulsion of meia.dúzia® Orange Blossom Honey with Chilly Pepper
Fresh cheese 
Cherry tomato
Apple wedges
Orange Wedges
Strawberry

PREPARATION MODE:
Season the Arugula and Lettuce with the emulsion of meia.dúzia® Orange Blossom Honey with Chilly Pepper, mix well.
Put 4 slices of fresh cheese (if you eat dairy), 3 cherry tomatoes cut into halves, 3/4 orange wedges, 2 sliced strawberries.
Finally, apply the meia.dúzia® "Bravo de Esmolfe" Apple extra jam with Mint and Port Wine at your taste.

"SONHOS" WITH meia.dúzia® "BRAVO DE ESMOLFE" EXTRA JAM WITH CINNAMON AND meia.dúzia® BLUEBERRY EXTRA JAM WITH MELISSA - CHEF GIL PINTO – Portuguese Christmas Recipe

INGREDIENTS:
200 ml Water;
75g Butter;
1 Lemon peel;
1 Anise star;
1 Cinnamon stick;
1 Cardamom seed;
1 Salt spoon 
200g Flour;
5 Eggs;

meia.dúzia® Blueberry extra jam with melissa.

PREPARATION MODE:
In a saucepan bring the water to the heat with the salt, the butter, the lemon, the cinnamon, the anise and the cardamom seeds. Let it boil to infuse the spice flavors and remove them.
Add the flour all at once and mix until the batter peels off the pan.
Remove from the heat, pour into a bowl and let cool slightly.
Add the eggs one by one and stir constantly.
Bring the oil to the heat, put spoonfuls of batter in the oil so that there is enough space for the mass to grow.
When the batter rises above the oil level prick it with a fork and let the frying.
Take away the "Sonhos" and let them drain away.
Pass the "Sonhos" for sugar and cinnamon, give a cut so that you can insert the meia.dúzia® "Bravo de Esmolfe" Apple extra jam with Cinnamon and meia.dúzia® Blueberry extra jam with melissa.
