Panna Cotta with Passion Fruit Jam with Ginger. A light dessert filled with intense flavours!
In this recipe we present an easy-to-prepare dessert with a unique flavour that will satisfy your taste buds. The combination of vanilla sweet with passion fruit acid culminates in a melting pot of bittersweet and original flavours. Ideal for surprising family and friends, this quick dessert is delicious and light to the diet.
400ml full-fat coconut milk
1 vanilla pod
2 tbsp rum
1 tbsp lime (or lemon) juice
250ml plant-based milk
3 tbsp cornstarch
3 tbsp golden yellow sugar
150g Passion Fruit jam with Ginger
To serve (opcional):
Cut the vanilla pod in half, lengthwise, and using a sharp knife, scrape the seeds from inside.
On a sauce pan combine the coconut milk with the vanilla seeds, rum and lime juice. Leave the pan on medium heat.
Meanwhile, on a bowl, mix the plant-based milk, cornstarch and sugar and whisk well to combine.
Add this mixture to the sauce pan, and whisk constantly, until it gets thick.
Pour the mixture into little glass cups and let them cool down, in the refrigerator, for at least 2 hours.
Add to the panna cottas a generous layer of Passion Fruit jam with Ginger and serve with some coconut flakes and fresh mint.
